Marinade:
1.5 lbs. Hawks Hill Ranch Wagyu skirt steak
1/8 cup avocado oil
3 tablespoons Cholula hot sauce (or your choice)
1 tablespoon Cumin
1 teaspoon Mexican oregano
Pinch red pepper flakes
Mix ingredients rub skirt steak and let marinade up to 24 hours
Cilantro/Crema sauce:
1 cup Mexican Crema
1/2 bunch fresh Cilantro
Juice of 1 lime
1 tablespoon Cholula
Blend until creamy
Fixings and Assembly:
Shaved radishes, sliced onions, Mexican crumbling cheese (or cheese of your choice)
Cook beef on the grill or in a skillet or wok and slice into strips
Dip corn tortillas in the steak marinade and fry to your liking
Add steak, onions, cheese, radishes and top with Mexican/Crema Sauce.
